The Maestro Wu D26 Taiwan Magurokiri extra tall chef knife is designed as a big fish knife with a long, straight blade that is 300mm, or 12″ long and 8omm or 3″ high. It is used to make long lateral cuts as well as cross sectioning cuts on large fish like Tuna, Mahi, Swordfish, Grouper, etc. As a BBQ Knife, it is an oversized extra tall chef knife that can make long, singular cuts into big brisket and ribs. It is also perfect for commercial kitchen use. It is a double bevel version of a Japanese Magurokiri blade, which is literally a “tuna cutting knife”. This knife features a black Bakelite handle, and is also available in a tradition wooden handle version G-26 and a textured all steel handle F-26.
