Master Kuo G-3 Mini Taiwan Tuna Knife & Boning Knife functions like a precision scalpel, ideal for gutting and scaling small fish. It is also used in Asian markets as a boning knife to portion meat and cut around bones. Constructed with 3-layer laminated steel: Stainless outer layers and a traditional Japanese High Carbon SK5 steel inner core, with a RC hardness of 60-61. Knife care instructions: Clean with warm water and soap, ensuring immediate towel drying and dry storage; avoid dishwasher use. While the stainless clad outer steel prevents rusting, the exposed SK5 core edge steel may develop surface rust over time, removable by sharpening the edge. For a slightly larger knife, check out the G-3 small. Master Kuo knives arrive exceptionally sharp from the factory, with additional potential post-professional sharpening services. Recommended services include 2000 and 5000 Grit options. Custom-made leather sheaths are also available. Dimensions – Blade: 120 x 50 x 1.5 mm / 4.75″ x 2″ x 0.06″ Handle Length: 95 mm / 3.75″ Overall Length: 205 mm / 8″ Weight: 105 g / 4 oz. Kuo Chang-Shi is most famous for forging the original Green Sword of Destiny from the 2000 movie “Crouching Tiger, Hidden Dragon”. His Damascus steel designs incorporate human bones and ashes to imbibe the spirit into the piece, as well as to add some elemental strength to the steel (such as manganese and phosphorus), which is based on historical accounts in ancient Chinese sword making.
