The Master Kuo XL Taiwan Tuna Knife – Big Fish Knife (G5-XL) is designed for cutting the heads off of big fish and for cutting the body into steaks. It is used by pushing the heel of the blade into the fish and then rolling the blade forward to finish the cut, or zipping through long lateral cuts. This knife is made with 3 layered laminated steel. The outer steel is stainless while the inner core steel is a traditional Japanese High Carbon SK5 steel, and has a RC hardness of 60-61. Avoid dishwashers, as the stainless-clad outer steel resists rust, but the exposed SK5 core edge steel may develop surface rust over time. Most surface rust can be removed by sharpening the edge. While Master Kuo knives are exceptionally sharp, our professional sharpening services can enhance their performance further.
