The Master Kuo G-5 Large Taiwan Tuna Knife is designed to cut the heads off of large fish, slice the fish from end to end, and to cut the body into steaks. The curved leaf shape is really handy for butchering large fish like Tuna, Mahi, and Grouper. This Taiwan Tuna Knife G5 is made with 3 layered laminated steel. The outer steel is stainless while the inner core steel is a traditional Japanese High Carbon SK5 steel, and has a RC hardness of 60-61. Avoid using a dishwasher. While the stainless-clad outer steel resists rust, the exposed SK5 core edge steel may develop surface rust over time. Routine sharpening can effectively remove most surface rust.
