Chef Knife 8 Inch – Master Kuo 210mm Custom Forged Spring Steel (FN Big D7)

The FN Big D-7 210mm Chef Knife 8 Inch is hand forged from spring steel with a traditional wooden handle and a rat tail tang. The edge is hardened to Rockwell 60 and the 8″ blade keeps its protective scale coating from forging to give it that more rugged, rustic, and all around more manly look. The FN Big series started out as a collaboration effort between Jende and Master Kuo to make some seriously large fish knives, but we quickly realised that we wanted a chef knife and a heavy cleaver to round out the series. Towel dry immediately. Do not put into dishwasher. The edge steel can show signs of surface rust over time. Most surface rust can be removed by sharpening the edge or using a scotch brite pad. Master Kuo knives are some of the sharpest factory sharp knives we’ve ever seen, but they are capable of even more after our professional sharpening services. We recommend the 2000 and 5000 Grit services for this knife. You can also add a custom made leather sheath.   Kuo Chang-Shi is most famous for forging the original Green Sword of Destiny from the 2000 movie “Crouching Tiger, Hidden Dragon”. His Damascus steel designs incorporate human bones and ashes to imbibe the spirit into the piece, as well as to add some elemental strength to the steel (such as manganese and phosphorus), which is based on historical accounts in ancient Chinese sword making.
